So it was tuna quesadillas
I was looking at that 101 summer dishes thread and got inspired to do something different with tuna, so we decided on the quesadillas. They weren't half bad. I've never used canned tuna for any Mexican type dishes, it works pretty well. I buy albacore packed in water. I just added some fresh salsa they sell in the produce section, onions, jalapeno, and then topped it off with the Kraft Mexican cheese. Pretty good. I think I might even try fish tacos with tuna. Quick and a lot healthier than burger.

2. I'm not a tuna guy myself (sushi/sashimi aside)
but one variation might be to toss, instead of salsa, a can of Ro-Tel

But I bet ro-tel people would totally like that idea. The thing is, you really almost don't taste the tuna in this, it's just a little added protein filler. I bet if you sort of marinated it in a spicy concoction for an hour or so, it'd be even better. Cheap, easy and healthy. That's all I'm going for.

But do you really not like a fresh tuna filet? Oh my god, yum. It's very good too. Just takes a little more preparation.

Takes me back to childhood things that I don't like. The list also includes such gems as:

Shepherd's Pie
Creamed Corn
Steamed Spinach
Vegetable Medley
Peas in Sauce
Tuna Tettrazini
Instant mashed potatoes

Mostly canned crap my school served in the 60s and early 70s.

5. See, this is totally not that
That's why I posted it. A way to eat tuna, white albacore in water, without it swimming in fat and salt. Some people can't afford a tuna steak, but they can buy a $1 can. It served me and my husband too, btw.

6. When it's tomato season, I like to make a huge vegetable

tossed salad with lots of cucumbers, tomato, peppers, and anything else handy. Then I add 3/4 of a small can of albacore tuna packed in spring water. Top with a coarse grating of parmesan cheese and balsamic vinegar dressing. Add bread or crackers. It's a meal fit for a king or queen.

Oh, the other 1/4 can of tuna gets split between my 3 cats. They love tuna salad nights.

Your quesadillas sound like something I'd like to try. Thanks for posting the directions.
