Does anyone here make meat-stuffed jalapenos?
I have a friend at work whose mother makes these phenomenal stuffed jalapenos. They're stuffed with a meat mixture - I can tell there is jicama in there, and raisins and I think it's ground pork but I'm not sure. Not sure what spices are in there.

They are dipped in a batter and fried - oh, my god they're good! There's a light sweetness to them, they're not overly hot but have a nice bite to them.

She won't give up her recipe. :grr: My husband has been trying to reverse engineer them with little success but can't seem to break the code.

If anyone has anything like this, it would be great. :hi:

2. Thanks
They are somewhat different from Rellenos but that thread yielded some good directions to try. :hi:

3. The stuffing mixture is picadillo
and it's like spaghetti sauce, as many recipes as there are cooks. However, you know what some of the ingredients are, so you should be able to find a decent recipe using them now that you know what it's called.

My favorite place for chiles rellenos is at the Pueblo Cultural Center Restaurant here. They stuff the big Poblano chiles, bread and fry them.

Chiles rellenos can be stuffed with just about anything: cheese, picadillo, chicken, steak, whatever goes with peppers.
