Orange sherbet on a hot night -- my first post in this forum
I don't know if my cooking qualifies me to be in this forum, but it's so much nicer here than in GD or GD:P at the moment that I hope you don't mind if I hang out a bit.

I have an electric ice cream maker with a little tub that lives in my freezer in hot weather. After some experimentation when I bought it about a decade ago (after which I forgot I had it for a couple of years), I now do mostly what I call "instant gratification ice cream" -- pretty fast recipes that are yummy and cold. It doesn't matter what I put in them -- it's going to have way fewer calories and less fat and sugar than any commercial ice cream.

Orange Sherbet/Yogurt

2 1/2 cups plain whole milk yogurt
2/3 cup frozen orange juice, undiluted
1/3 cup honey

Mix as well as you can, given that the OJ is still frozen and the honey gets hard, then chill well. Pour into the ice cream maker.

This one will store well for a few days because the honey prevents it from freezing too solidly to be able to spoon out. But in my experience no ice cream ever lasts that long around here anyway. ;-)

1. Welcome, Hekate!
We're of all various levels of cooking experience and expertise around here, with some of us still stretching and experimenting, so don't feel out of place. You recipe sounds really refreshing. I've been wanting to try just a sherbet or sorbet but the husband likes his ice cream.

My basic recipe is:

1 c. heavy cream
1 c. yogurt
1 c. sugar
2 t. vanilla

then I do the flavor variations from there.

One thing I can do right away is whip the ingredients with the mixer to incorporate air, because I have had a problem with storage.

I've got to save all this and add to my ice cream recipe file.

9. I always use the mixer
to incorporate air; it makes it much easier to spoon out after it's been in the freezer. Too long, tho, and it seems to be too airy and never gets really cold like ice cream should.

2. Welcome to the group - there are no membership requirements here
and no one is good at everything. You may make the best lemonade in the world, but still suck at ice tea. Between us all, we can do anything from grilled cheese to cheesecake, but no single person knows everything.

I've always been partial to sherbet. It turns out that I'm lactose intolerant, so ice cream is tricky anyway, but it really doesn't matter, because I've always liked sherbet over ice cream anyway.

In fact, your post had me go to the freezer right now for some.



This line of sherbets is pretty good. This particular flavor is less interesting than the others, but the quality and texture are nice.

And on a hot day, who really cares??

I just made sazemisery's cream cheese ice crean and added in some wild black raspberries I had sugared and had in the freezer. :9

8. I had to stop what I was doing here to go make some vanilla ice cream w/ blueberries
I threw in some cream I had, about half a cup

Vanilla

3 1/2 cups half-and-half
1/3 cup sugar
1 tsp vanilla extract

Freeze

Top with little tiny frozen blueberries, sugared

Dang, it's another hot night in Goleta. Mr. H and I are going to eat some midnight ice cream now. :hi:

10. Definitely stick around here.
Like Stinky said, it's quite the little island of sanity and there's tons of inspiration, along with great stuff to learn, from the folks in this forum. Everyone is so wonderful about sharing what they have. :hi:
