Duck eggs.
My husband brought home six large and lovely duck eggs from the guy we bought our chickens from. We'll probably get a few ducks once he hatches out some more, maybe not til spring though. I don't want the trouble and expense of keeping the babies warm through their first winter.

Anyway, I've never eaten a duck egg before. We'll have a couple of them for breakfast but I'm trying to decide what to do with the remaining four. I'm wanting to make a cheesecake this weekend so that's an option. I actually found some of those Famous Wafers to make chocolate crust.

Any other ideas?

1. They make a lovely souffle or quiche or clafoutis.
They're like hen's eggs but larger. I get some whenever my poultry CSA has them. They're good for pudding, too.

We use them when we are making half of a recipe that calls for "3 large eggs." One duck egg is the perfect solution for halving such recipes!

I have not tried them in meringue recipes.

3. We each just ate one
for breakfast and they were very good. As the other half described them, "Just like a chicken egg, but even more so." That's a good description. Thicker, whiter whites and a nice rich yolk. Everything you like in an egg...only more so. LOL

4. Cakes, darling, cakes!
When we had domestic ducks (20 years ago) the older ladies at the church paid premium price for duck eggs due to the loftiness they imparted upon their cakes.

6. I decided to save
the rest of them for next weekend and make a cake rather than use them in the cheesecake.

7. I guess that wouldn't be good
unless you really like eggs, which we do, thankfully. I am going to use the rest next weekend for a cake. Just haven't decided which kind yet. :hi:

commercially, like at grocery stores? Sounds like they'd be really popular.

Our ducks are prolific layers and I always seem to have a surplus of them. I usually hard boil them and chop them up (shells and all) and feed them to the chickens, who reward me with...more eggs. They are terrific for baking though. I use them so much that now egg bread made with chicken eggs just seems wrong. My first stepfather (he passed away 5 years ago) used to love them though. Whenever he and my mom would visit I'd always make him breakfast of duck eggs and fried venison tenderloin with toasted homemade bread. It was his favorite, and we'd always send a couple dozen duck eggs home with him for good measure.

11. I wonder if you put one of those signs up
that says "Fresh Duck Aigs" you'd be able to sell some of them. :)

I did end up using them in a coffee cake and, even though I forgot to adjust the liquid for the sub of half ww pastry flour, it still came out moist and light.

Our road does get a lot of traffic, so it could work!
Glad to hear the duck eggs worked for you. They really are the best for baking. Duck eggs, and powdered milk just can't be beat when it comes to baking. They give a perfect light texture like nothing else can.

14. I'll bet if a store like Whole Foods put them on their shelf (as a novelty at first)
that they'd be a big hit. I think it's a question of education (experience) rather than
anything else. I'll bet most people have never even had a duck egg. I haven't. But I
wish they were available. I'd try them in a heartbeat.

15. Sorry - here's another try.
It came from www.Worth1000.com website that showed up in a google picture search. I vaguely recall they don't like others posting the manipulated hilarious photos they host in their picture contests. But
