I just pulled my first foccacia experiment out of the oven. It smells yummy!

I just pulled my first foccacia experiment out of the oven. It smells yummy!

I brushed it with garlic-infused olive oil, sprinkled on some kosher salt and crushed dried rosemary, and some chopped onion.

Now for the taste test.........

Oh yeah, that's nice. When I have some with dinner tonight I will dip it in some olive oil with garlic and crushed red pepper, like the good little Italian places do around here.

I love focaccia ......

Here's a thing to try ...... hold your fingers sorta as you were gonna play the piano. Now drum the top of the focaccia with them so you get finger sized dimples all over it. Then do the oil and onions and salt and whatever else you want to put on top. The dimples help it cook and also help hold the toppings on.

13. Sad news Stinky: I DID poke the holes in it, lol. But I didn't get the
dough smushed quite flat enough, especially the bigger one, and they got all poofy when they baked and the holes pretty much disappeared, lol. But they did hold the toppings in place until they could bake onto the surface.

Next time I need to let the dough rest a little more and smoosh it out flatter.
