What's for Dinner? ~ Wednesday March 4th

Not sure here yet.
I'm insanely hungry (haven't had a bite of anything yet) and everything sounds good. :)

It's likely to be something with Greek flavors though. I have spinach, olives, and feta in the house. :D

1. I'm doing something Italian.
I have spaghetti sauce, various shapes of pasta and some leftover chicken. I'll think of something. For vegs I have an eggplant and some savoy cabbage...probably cook one or the other, but not together!

2. Mexican dinner here tonight
Cheese enchiladas, refried beans (pintos are in the crock pot) and an avocado-tomato salad.

I love Greek food - it's my #1 choice in ethnic recipes :-).

11. How do you do your pintos?
I'm just now starting to make ours from scratch. We've been doctoring up canned whole beans for a long time and we eat so much Mexican food that I really should just do them myself.

And YAY! another Greek food lover. It's a new love affair for me.

I seem to flip from Greek to Mexican to Italian, and to a lesser extent Chinese, a whole lot lately.

19. I just soak the pintos in water in the fridge overnight
Then I drain them, put them into the crockpot and cover with water. If I'm home, I cook them on high for one hour then turn it down to low.

When they are done, I usually just drain them and heat up some canola oil in my cast iron skillet. Then I add them to the oil and mash them in the pan. I only season them with some salt. For leftovers, I saute some diced onions and green bell pepper in some oil, add some cumin and chili powder and then the leftover beans and heat it all up.

20. Thanks! I like the idea of cooking them in the crockpot to start.
Bill does a great job flavoring, but I wasn't sure which way I wanted to cook the beans. I think I'll chuck some in my crock pot tomorrow. Thanks!

3. Quiche
Onions, swiss cheese, spinach. Some NUTMEG!

I usually make it with bacon too, but not this time. Last time I gave one to my dad, he was disappointed that it had bacon, because his Swiss grandmother made it just with onions & cheese.

Yeah, making TWO quiches, so I can give dad one.

I never make quiches. Or, actually, I never think to make quiches. And I like them.
Need to do some recipe surfing and give it a go. :)

I've just pulled a casserole out of the oven - pasta shells, ricotta, sausage, zucchini, various and sundry cheeses and spices, wine, tomatoes....

smells yummy!

6. Shhhh.
I really don't want to mess in the kitchen tonight so I'm throwing caution to the wind. I stopped on the way home and got shrimp and veggie fried rice for Bill and General Tso's for myself. I'm just plain too tired to care.

15. General Tso's is my all time favorite sweet/spicy Chinese dish.
If I have to eat a single dish, (no buffet) it's what I order.

7. Thai crab and corn soup.
Lots of garlic, ginger, hot pepper, chicken broth, corn, crab, fish sauce, egg, paprika, chopped cilantro, and a squeeze of lime. Still puny and I haven't been shopping so I haul these basics out of the pantry and make the most of the fresh basics I always have on hand in the fridge.

21. Was yummy. Been going like a house afire today, my first day at work this
week. Back to roast beef leftovers, but bought nice, fresh salad stuff to go with it. I'll probably stuff myself, belch, and pass out in my chair. Whew! What a day! Hope yours was sweet and productive. :hi:

8. rotini with meat sauce...
...salad and bread. Simple, simple. We have a guest visiting from Transylvania and we just eat plain average American food when she's here.

She's begged for a grapefruit and avocado salad tomorrow so I'll pick up avocados tomorrow at the store. One thing the small towns of Romania do not have is much produce in the winter -- except cabbage!

17. I'm doing pizza and a salad tonight, but grapefruit and avacado sounds great.
Hope you're having a great visit with your company. I cant imagine going without all the variety of veggies we have in the winter here. And our local store isn't the greatest. Your post makes me realize how lucky we actually are. :)

My son made honor roll (3.89 woohoo!!!!)
They had an awards ceremony tonight at his school, then we went to a mexican restaurant for dinner.

22. Salmon patties cooked and frozen a couple of weeks ago
Also cream of asparagus soup with mushrooms--no leftover potatoes as recommended on a recipe somewhere around here.
