What's for Dinner? ~ Wednesday March 11th
Getting an early start on this one because I already know. :D

A good friend brought us a pan of his yummy fresh baked lasagne a few hours ago, so we'll be doing lasagne, garlic bread and a salad. And I may crack open a bottle of wine.

I tried 'em.

Not too bad.

I was kinda guessing what to stuff 'em with, so I just did steak, sour cream, dab of horseradish. I think that was burrito mentality though... not bad :D

5. Chocolate cake because I can...
being mostly grown up now, if I want chocolate cake for dinner, I am going to have chocolate cake for dinner.
And a side of corn or something.

7. Making soup - Bean Barley
Just started it

1/2 onion
3 carrots
2 celery stalks
1 slice celery root
bay leaf
coriander
1 very big clove garlic
turmeric
parsley
1 cup barley
1 big can kidney beans

veggies are boiling now, will add the barley now, then beans near the end since they're already cooked

:)

9. I don't know.
There's plenty of fresh food in the house (except for meat -- but who needs that?). I was at Trader Joe's two days ago, so there's feta, and ingredients for caprese, and greek yogurt, and and and...

Maybe I'll make a big pile of buttered, parmesan pasta and bowls of stuff to add on, as wished. And then I'll have the leftover corned beef. Low carb, baby.

10. My brain fogged over and the mention of the magic word
Caprese is probably my favorite food thing in the world! ...but the buttery parmesan pasta sounds wonderful too.

I am going to serve with warm tortillas.

I have never used white hominy, nor tomatillos. I sent a text message to my husband with some of the ingredients. This is a guy that hates to buy a gallon of milk. But he did well. He came home with all on my list.

15. This was very tasty.
It is dense, and extremely filling. I added grated Parmesan to my bowl.

I makes quite a bit. There are two of us, so we have enough for another meal.

22. More homemade pork/veggie pot pies
Hubby likes his crust really brown, but I prefer a lighter crust. I've been covering mine with foil for half the baking period, which is a nice compromise.
