Blueberry Scones

I been looking at these since Lucinda posted them some time back. Blueberry is Bill's favorite and I knew I had to make them. Mine didn't come out looking quite as nice (I think I didn't roll the pastry quite enough) and I'm waiting for them to cool so I can taste one.

ETA: Just did and they are light, fluffy and delicious! Mmmmm! :9

1. Oh.... Beautiful!
Those are fabulous looking! I'd love to reach right through my computer screen and pick one up right now.

We're having a spring-stormy weekend with unusually heavy rain yesterday and today... I'm feeling the need to bake SOMETHING! - maybe blueberry scones will be it (I'm also toying with popovers, too...). We'll see.

How the heck to you have the time/energy to bake bread AND blueberry scones on the same day????

that's good enough for me. I've never made them before. The ones on the site with the recipe look more flaky like pastry than the fluffy biscuit-like texture I got. I think my butter bits were too small and even though I was careful not to work the dough too much, I think I could have rolled it out a little more.

Do try that recipe. They really do taste lovely.

I did my biga and soaker last night, of course, and my new batch of yogurt. Cleaned up after breakfast this morning and got started. I need to make a cookie for the week yet. Luckily, I have beans and ham in the crockpot cooking themselves so I don't need to stop to make something for dinner and Bill had last night's left overs for lunch so that helps. I just pace myself through the day.

Thanks for all your encouragement and input, B. It really means a lot and is invaluable in keeping me trying things I've never done or been successful at before. :hug:

3. Scone dough
To tell you the truth, I think you scones look better than the ones pictured on the website! Yours are a little flatter, but I'll be your don't have big open spaces in the center and yours most definitely have a prettier shape that the ones pictured, at least that's my opinion.

Biscuit/scone dough takes practice to work with because it's so soft and you have to be careful to not add too much liquid and also to not knead very much. Yours _may_ have a tad too much liquid causing them to spread a bit more than you might like.

It just takes a little practice. You're an awesome baker and I'll bet they taste teriffic.

7. Those are perfect!!!! I'm series111!! They look exactly
like the ones I used to get at a very nice baking establishment near where I used to live. I usually got cranberry pecan, but blueberry were my 2nd favorites. 3rd favorite was maple walnut, then chocolate chip. At lunch time, they served savory scones with cheese and spinach (sometimes feta, sometimes cheddar).

Thanks for sharing your success. I'll definitely be trying this recipe.

I didn't think it was a difficult recipe to accomplish at all. Just a little messy, and heck...that's probably just me. :rofl:
