What's for dinner? ~ Sunday the 15th Edition
Chinese here again tonight.
Definitely Chicken Egg Rolls with some sort of yummy dipping sauce, not sure what else.
Bill is cooking!

And I have cherry cream cheese pie for dessert.
Which is a weird choice with Chinese, but it is what it is. :D

1. I am going to roast a chicken, not sure what I will have as sides yet.
I plan on leftover chicken to use for the crepes project.

I often use leftover roast chicken in tamales and enchiladas, will be nice to have some new things to try!

2. chicken soft tacos....
...with lime to squeeze on and fresh cilantro and avocado to add in.

Also spanish rice and crudites.

Dessert? It will have to be ice cream, as I'm off to the coffee house to make pies right now. Pumpkin, coconut custard, raspberry and lemon meringue today. The peeps like the basics best.

I need to start my seeds soon. We grow our own since it's so hard to get decent fresh herbs.

3. DH is preparing a Thundering Hooves roast ham
It is cured but not cooked, so it needs to be simmered for a couple of hours (yielding some very nice ham stock as a byproduct). Then he'll put it in the oven with sugar, cinnamon and cloves and baste it until it gets a nice surface.

When I get home from my meetings, I'm cooking up some asparagus to go with it.

5. Their meats are supposed to be superb.

4. I have beans and ham in the crockpot.
I used the 15 bean mix without the little packet of "ham flavoring" they throw in (I had half a bag) and added some extra pintos and lentils. Threw in some big chunks of the xmas ham, diced onion, molasses, brown sugar, cayenne, bay leaves, salt, pepper, garlic.

Bill did laundry today, which has helped immensely. :D

23. We always throw in potatoes at the end of simmering the
corned beef. The meat juices in the water give them more flavor.

Unfortunately, there is not much left:(

13. Healthy, low fat for us tonight.
Marinated wild salmon, heavy on the garlic, black pepper, and paprika briefly sauteed in olive oil, side of quinoa, and a mix of steamed veggies: bok choy, snow peas, green beans, onion & red kidney beans (pre-cooked). Just the thing to top of my 4 mile walk today. I'm finally recovered from the last vestiges of flu! :hi:

Paprika makes it purty! A friend brought back both sweet and hot paprika when she visited Budapest. I like it in the corn-crab soup, too.

38. I never used paprika before I met Bill, so I'm still finding all kinds of things
to do with it. He's a big paprika fan. :D

She got angry with me during the election (she hooked up with a neocon boyfriend) and doesn't speak to me any more because I scoffed at the idea that people were catching fire over the Palin VP nomination. Her mom is a Dem but now that my ex friend is pushing 60 she's striking out on her own and voting her boyfriend's conscience. Having lousy taste in men is not new for her but being a neocon shill is. I feel bad that I don't miss her that much.

44. Sure!
This is for 4-5 lbs. and I always go by half (except for the mixes) because there are only three of us, so I only use about 2-3 lbs.

4-5 lbs. beef of choice (I use chuck)
1 pkg. Au jus mix
1 pkg. Italian dressing mix
1 bottle beer of choice
1 jar hot peppers (or mild if you choose)
1 jar banana peppers with juice
Water if needed

Place roast in crock pot. Season w/ salt, pepper and garlic powder. Add mixes, beer and peppers. Add water to almost cover if needed. Cook on low for about 6-8 hrs. Remove roast, shred with fork, return to juices and cook an additional hour or as needed.
Serve with Italian rolls and provolone cheese. :9

18. Chinese take-out
I was going to make gumbo, but storms keep blowing through, threatening to take our power out. It's already blinked off a couple times. I don't want to get dinner halfway done only to lose the power. So hubby came up with the idea of letting someone else do the hard work of cooking. Veggie lo mein, Schezuan beef and lemon chicken.

26. I can relate to the power problems. We go through stages when we have a lot of outages.
Thats one of the reasons I don't keep anything in the freezer.

21. Kibbeh cooked in yogurt sauce
Was pretty good! I'm not a big fan of lamb so I used lamb in the stuffing but beef for the outer part. I was nervous about the sauce since it had an egg in it and you whisk until it boils. I was successful and didn't have scrambled egg yogurt sauce! :woohoo:

36. I got it out of a book called "Lebanese Cuisine"
by Anissa Helou. There are probably similar recipes online. Later when I have more time I can see if some are similar or post the one I have.

22. We’re having lentil burgers, baked fries and broccoli.
The lentil burgers turned out much better than the last batch I made (I made them thicker this time). I’ve been obsessed with making my own burgers as opposed to buying store bought veggie burgers all the time.

I don't have an actual recipe.
I just kind of cook lentils, mush them slightly and add veggies and seasonings to it. Then I bake it for a bit. :D

31. Well, we had little chicken breasts.
I shop from Swan's delivery between grocery shopping. I like some of their food. Frozen chicken breasts appealed to me for quick meals.

Chicken breasts thawed quickly. Season with spices you enjoy.

Small amount of oil in pan, sear chicken on both sides. Smother with salsa and hot pepper jack or mozzarella cheese and cover pan until cheese is melted.

Well, certainly they have the best ice cream. That's how they started the business. Interesting reading at the history link at www.schwans.com

This is actually the only food place I know where the company actually reads customers' views at their site and really listens and changes items based on customers' ratings of their foods. Their catalog reflects it quarterly.

34. Rolled Angus Beef Roast


on a spit at 450, covered with a seasoned salt mixture - over yukon gold potatoes, carrots, onions, sweet potatoes, and mushrooms(the last few minutes)

followed up with a chocolate cake, layered with dark sweet cherries and sweet whipped cream and champagne.

Mr T got creative celebrating our 12th year together.
