Pink Grapefruit Granita

1 lg. pink or red grapefruit
1 cup sugar
1/4 c. corn syrup (yes, I used some corn syrup. :crazy: )
4 cups water

juice of the aforementioned grapefruit

Microplane the zest off of the grapefruit (I also added the zest from the peels of two oranges I had cut in half and squeezed for breakfast juice.) Add the first four ingredients to a sauce pan. Stirring constantly, bring to a boil and cook for 2 minutes. Remove to a bowl and allow to cool on the counter for a while. Cover and refrigerate until completely cool.

Squeeze the juice from the grapefruit. Some recipes say discard the pulp. I don't. I leave whatever pulp that falls in there...in there. Take the syrup from the fridge and pour over the juice and mix. (No need to strain the zest out, it stays on the bottom of the bowl, just stop pouring just before it slides out of the bowl into the juice.) Pour the mixture into your ice cream maker and complete as you would ice cream. Place in the freezer, stir a few times, until it reaches the desired consistency.

Really very delicious and extremely refreshing! :9

1. Yum. I like my cranberry sorbet too.
Something about tart frozen stuff just rocks. Will give it a try!

2. I agree about tart frozen stuff,
and used to squeeze grapefruit, oranges and lemon for greatly refreshing juice drink. HOWEVER, can't/shouldn't have grapefruit with new medicine, so hope I'll survive the summer!

3. Is it just grapefruit you have to avoid?
That would be hard enough, but if it were all citrus I'd be crying. I use lime juice in all my sorbets, even the non-citrus ones.

4. FORTUNATELY, just grapefruit!
Couldn't LIVE without citrus! I've just started using fresh lemon for salad!!! I used to eat fresh lemon!

5. Lemon is one of my favorite flavors. I'd rather have something tart and lemony
than just about anything. Glad it's just grapefruit in quarrantine.

I was eating a lot of grapefruit when I was in college and was changing my hair color back after a show i'd done, and I ended up with flat ash gray. We finally figured out it was from all the grapefruit i'd been eating, so I'm not surprised to hear it can effect your meds too.

6. That's funny, flat ash gray. SOUNDS funny now, that is.
Haven't looked into the meds issue; its a common one for cholesterol (which is new to me, too.)

7. I hadn't heard that about cholesterol. And it was funny then too.
:D Life's to short for drama unless it's on stage. I did fix it quickly though.

Its an apparently commonly-prescribed med (can't recall name at the moment.)
