Lima Bean- Grape Tomatoes - Kalamatas Salad recipe
(adapted from Vegan Planet by Robin Robertson).

3 c. frozen lima beans, cook according to package directions
3 T. extra virgin olive oil
2 T. fresh lemon juice
salt and pepper to taste
1 c. halved grape tomatoes
1/2 c. minced scallions
1/2 c. minced fresh parsley leaves
1/4 c. kalamata olives, pitted and sliced


Cook frozen lima beans and drain. Mix with the olive oil, lemon juice and salt and pepper to taste. Add all the other ingredients and mix gently to combine. Cover and let stand for 20 minutes to allow the flavors to mingle.

This was delicious! I'm not a vegan, so next time I will be adding some diced up feta cheese to the mix.

Should serve 4-6 as a side salad.

2. I could eat Lebanese, or Middle Eastern Food three times a
day and not have enough. This recipe is a keeper :hi:.

Two of my favorite restaurants...One is Lebanese and the other Moroccan. Soooo good. :hi:

I used to have a friend from Lebanon, his Mom made incredible Kibbeh. YUM.

11. Have you ever shopped in the Armenian stores in Watertown?
Arax Market on Mt. Auburn is great --- get some crushed Aleppo peppers. They're mildly hot and very tasty.
Also go to Eastern Lamejun bakers on Belmont St at the Belmont/Watertown line. Lamejuns and borek (beoreg) are great and you can buy a bunch to freeze for later.

4. I make that salad with Edemame (or something very close)
I do sprinkle feta or parm over it and use some fresh basil if I have it.

10. I think I'll try it with fava beans.
Maybe ramp up the seasoning a bit with a little fresh mint and more lemon juice.
