1. No crepes yet.
I'm frying chicken tonight so maybe I'll save some of the meat for a crepe filling. I have ricotta cheese I want to use, too, so still tossing around ideas. Who knows, I may sit this project out. Not sure yet.

Gonna make mashed potatoes and incorporate some of the yogurt tops Bill has been scraping out of the jar when he opens a new one. Since I've been using raw milk, he says the top tastes too much like butter and he doesn't want to eat that in the morning. I think it tastes like really rich sour cream so into the taters it goes.

Still haven't decided on a veggie yet.

22. I could use a nice piece of fried chicken right now.

2. Not cooking today.
We're going out for Mexican. :)

We always have a late breakfast around 11AM. Later in the day we head out for pizza or something else. Today is something else day.

How do you fix your baked ziti?

It's one of my favorite dishes, but, being the laziest Italian-American who ever lived, I've never fixed it myself. I did, though, find Carmela Soprano's recipe for ziti, and, lord, it sounds so good, I ordered the Soprano Family Cookbook (by Artie Bucco). It hasn't arrived yet, but I anticipate a great read.

So, if it's not too much effort, can you tell me how you do it?

8. Sure - i love the stuff.
I make a tomato sauce with meat. I saute onions, garlic and whatever else I have on hand (today it's carrots and mushrooms), brown the meat and add canned tomatoes, water or broth, italian seasonings, etc. I let this slow cook for hours.

Cook the ziti al dente - it will cook a little more in the oven.

I mix ricotta (about 1 cup) and grated parmesan (about 1/2 cup) with parsley, salt & pepper and add it to hot, drained pasta, then add the meat sauce (hot) and then add chunks of mozzarella (about 1/2 pound). Mix well. It should be thick, but not solid (add more sauce to get the consistency you want).

Put in a 9 x 13 pan, sprinkle more parmesan on the top and bread crumbs if you really like a crunchy top.

Bake uncovered at 425 for 20 - 30 minutes (until bubbly).

Serve immediately.

Easy cheesy and leftovers freeze well.

I am going to make a double recipe today because there is nothing quite like pulling this out of the freezer on a no cook day.

You can use sausage for the sauce, or go meatless. You can use other cheeses - anything that melts well is good (softer cheeses).

Give it a try - you really can't go wrong!

You make it sound awfully easy, and I don't think I've ever had baked ziti with breadcrumbs, but I make my own panko, so I think that's a definite go.

Thank you so much for taking the time and the trouble. I agree that a double batch is the only way to go. This stuff freezes so well, and I know that because Carmella Soprano was forever taking her frozen baked ziti out of the freezer for that leech, Father Phil. :)

This was really nice of you. I hope yours was wonderful, and I'll let you know how mine turns out.

25. No red and green peppers--the kid doesn't like them--
used one can of tomato sauce and one of tomatoes. I added sugar to the liquids toward the end. We were lucky to have fresh tortillas to go with the chili, and the kid brought some Mexican-style sour cream, which I can't figure--as it seemed like typical sour cream to me. Oh--we used garbanzos instead of the bulgar.

10. Nothing; I'm not really eating. But we had dinner at a friend's yesterday

She was at CIA (specializing in pastry, though) but made a roasted mustard-encrusted salmon. I contributed a mushroom mix of thyme and tarragon, butter and (of course) mushrooms, which sauteed up nicely, and wild rice. I only tried a few bites of the salmon but it was good. Of course, my stuff was perfect :) No, it was all good. We just relaxed and tried to forget about the world for a few hours.

23. crispy brown pork roast, roasted yams...
...green beans with dill butter, and a broccoli-cheddar-rice casserole for those who can eat carbs. I ate half of a yam with some butter and orange zest, and it didn't send my blood sugar off the chart, which was lucky. I was worried about that possibility, but damn it was tasty and worth the risk.

24. Roasted turkey breast with gravy and green beans with slivered almonds
I got a back and neck to go with the breast. Leftover bones and meat will be turkey soup tomorrow. With pasts from Friday, frozen peas and corn, and some carrots.
