What's for dinner? ~ Monday the 30th
Posting early because I'm awake and pretty functional. :) Hope those of you that have been under the weather are doing better today.

Friends brought us a cheesecake and a huge big pork tenderloin yesterday afternoon, so I will most likely roast the pork with veggies. I had planned on making French Dip sandwiches and spinach salad, but Bill is a pork guy, so I assume that will be his first choice. And I'm good either way.

Turned out to be a "Pay-It-Forward ~ Food Edition" weekend for me. I had baked an apple pie for a friend who was craving it, and prepped a bit of sourdough starter for another friend who was coming over with her husband for some help with his computer. They showed up with the cheesecake and a pork tenderloin. :D So nice of them.

I haven't decided what kind yet - maybe Navy bean with some homemade bulgur rolls and a side salad.

(Why is it snowing on March 30?)

7. When I lived in Ohio
we did get 12" of snow on April 1st. And this wasn't up on the lake so it was quite different that what we were used to. :wow:

We're having leftovers unless I decide to make crepes tonight. I'm usually not in the mood on Mondays but we'll see how I feel when I get home.

21. Well, we ate the rest of the chicken
so I have to figure out something else if I'm going to make crepes tomorrow. I have to take my corned beef out of the brine and cook it tomorrow so not sure if I'm going to get to crepes or not, altho all the entries so far have been fabulous.

Days to have a way of setting their own agendas sometimes. Still good to have a plan going in tho, no? :hug:

5. Freaky weather isnt it? It looked like it could snow here yesterday
Soup, salad and rolls sounds great to me. I seem to be craving stuff like that the last week or so.

8. Nice warm bowl of Fish Chowder

tonight, potatoes, lots of pepper. Crackers or bread.... hmmm

My scale will be a whole lot happier when it gets warm enough around here to enjoy dinner salads...

10. I'm sure this isn't a record (the snow) but on Saturday I
was outside without a jacket. The daffodils and tulips are about 4" high now. I'm ready for spring :hi:.

9. turkey
I had to get it out of the freezer to make some space. It's a big one, so we'll be doing turkey for several days.

Not tomorrow, though. Tomorrow we will have crepes. They are going to be asparagus souffle crepes, with souffle baked inside. This oughta be fun.

16. I'm using the Ain 5 to make pork buns
I have some left over spicy pulled pork that I'm going to stuff into little rolls made from the Bread.

I made some cream of cauliflower/asparagus soup yesterday and will be using up the left overs.

17. The rest of the super delicious baked ziti I made yesterday.
It came out just perfect. Made a double batch and sent half of it home with the guests. We will chow down on the other half tonight.

Sadly, there will be none for freezing.

22. Here's the recipe
for Carrot Orzo - easy and yummy

* 6 ounces peeled baby carrots (about 1 1/4 cups)
* 2 tablespoons butter
* 1 cup orzo
* 1 1/2 cups water
* 1 1/4 cups low-salt chicken broth
* 1 large garlic clove, minced
* 1/4 cup grated Parmesan cheese
* 2 tablespoons chopped green onions
* 1 teaspoon minced fresh rosemary

Place carrots in processor. Using on/off turns, finely chop carrots. Melt butter in heavy medium saucepan over medium heat. Add orzo and carrots; sauté until orzo is golden, about 5 minutes. Add 1 1/2 cups water, broth, and garlic; cook uncovered over medium heat until all liquid is absorbed, stirring frequently, about 10 minutes. Stir in cheese, green onions, and rosemary. Season to taste with salt and pepper and serve.

27. Indian food: chicken korma, palak dal, pumpkin paratha.
The korma's a jarred sauce with the addition of sauteed chicken cubes and peas.
Palak dal is spinach and green lentils with spices -- easy once the prep is done.

Paratha is layered griddle bread -- never made it before and it was so easy! It's just flour, salt, and oil/ghee dough needed and allowed to rest for a bit, then rolled into pancakes, brushed with fat, folded, brushed again, then grilled in a well seasoned cast iron pan for a few minutes. Stuff ones have a highly spiced thin layer of vegetables, in this case pureed pumpkin seasoned with curry powder. I'll be making these again.

29. Chicken Cacciatore
I cut up and browned one of my marked down organic chicken deals. Then smothered it all with Newman's Own tomato sauces. Simmered the chicken in sauce on low for 3 hours and it was falling off the bone - my favorite way. I also baked some penne pasta with sauce and cheeses to use up the shredded mozzarella and ricotta we had on hand.

Over the weekend I was down late Saturday night into Sunday. You too? No tummy troubles or headache but just chills, a fever and some sensitive skin and muscles. I'm on the mend since I was hankering for cacciatore. I noticed you were not around one day. I'm glad you're doing better and btw did you say French Dip! I haven't had that for a long time. It's delish.
