the Pyrex POW factor hit again today
I took the most beautiful peach-brown sugar pie I ever have made out of the convection oven at the coffee house. Ah! A real beauty. I put it (as I always do) on an aluminum baking sheet on the cooling rack. I noticed just as I set it down that this particular baking sheet was a little bit wet and cool. Too late! POW!! The damned Pyrex pie plate shattered in a neat ring. The edge of the pie plate came off in a neat collar. I couldn't see ANY shards of glass on the pie itself, but could not take any chances with paying customers. It really hurt.

 Here's to better pies to follow. (PS, allow me to add that putting it on a wooden surface is probably safer, but I know that you know that) :-)
