I have a craving for chocolate. I have some cocoa powder, but no
baking chocolate, and don't want to have to go to the store. Ideas, anyone?

1. Do you have any Processed Cheese food in your pantry?
I'm actually making a batch of this fudge this week to send to the kid in College. If you've never tried the Velveeta Fudge...You should try it. Full of fat, flavor and who knows what else...but it really is very, very good.

2. No, I haven't allowed that petroleum product masquerading as "food", lol
in my kitchen in 30 years (the college BF loved it, but me, not so much). And I was raised on Velveeta grilled "cheese" sandwiches, which I loved, lol.

I'm strictly a butter, lard, olive oil, and canola girl these days.

3. 1 heaping tsp of cocoa powder, 1-2 heaping tsp of sugar and 1 cup milk
Microwave for 1.5 minutes, and you have hot chocolate.

:shrug:

Another possibility: I made brownies and frosting out of cocoa powder once -- can't remember the exact recipe, though.

Deep Dark Chocolate Cake
Ingredients:

* 2 cups sugar
* 1-3/4 cups all-purpose flour
* 3/4 cup HERSHEY'S Cocoa or HERSHEY'S SPECIAL DARK Cocoa
* 1-1/2 teaspoons baking powder
* 1-1/2 teaspoons baking soda
* 1 teaspoon salt
* 2 eggs
* 1 cup milk
* 1/2 cup vegetable oil
* 2 teaspoons vanilla extract
* 1 cup boiling water
* ONE-BOWL BUTTERCREAM FROSTING(recipe follows)

Directions:
1. Heat oven to 350°F. Grease and flour two 9-inch round pans or one 13x9x2-inch baking pan.

2. Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl. Add eggs, milk, oil and vanilla; beat on medium speed of electric mixer 2 minutes. Stir in boiling water (batter will be thin). Pour batter into prepared pans.

3. Bake 30 to 35 minutes for round pans, 35 to 40 minutes for rectangular pan or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely. (Cake may be left in rectangular pan, if desired.) Frost with ONE-BOWL BUTTERCREAM FROSTING. 8 to 10 servings.


ONE-BOWL BUTTERCREAM FROSTING
6 tablespoons butter or margarine, softened
2-2/3 cups powdered sugar
1/2 cup HERSHEY'S Cocoa or HERSHEY'S SPECIAL DARK Cocoa
1/3 cup milk
1 teaspoon vanilla extract

Beat butter in medium bowl. Add powdered sugar and cocoa alternately with milk, beating to spreading consistency (additional milk may be needed). Stir in vanilla. About 2 cups frosting.

5. got buttermilk? you can make fudge
it might work with milk you have soured with a bit of lemon juice or vinegar

Just melt a couple tablespoons of butter in a sauce pan with some cocoa. Add about 12 oz powdered sugar and 2 T buttermilk. Stir over the heat until smooth and incorporated. If you think it's too runny, add some more powdered sugar. Add anything you want to this -- coconut, choc chips, nuts, whatever. Pour into a buttered pie plate or shallow dish.

House fudge.

Dromedary used to make a very good mix, but no longer. I've tried some recipes, but they are not very chocolatey. I seek a dark chocolatey version.

Hot chocolate has already been suggested.

Baking chocolate is highly overrated when you have a serious chocolate jones-- if you have some chocolate chips or candy of any kind it can be melted and mixed with the cocoa powder and perhaps some cream, some fruit jam and whatever sounds good to make a ganache to be poured over, well, anything. Like Rice Krispies or Corn Flakes, or... Even without the candy, you can add a little water, sweetener, and vanilla extract and cook it all down to get a very nice chocolate syrup.

If, on the extremely odd chance you have an avocado and a banana on hand, you can throw them in a food processor with the cocoa powder to make a ridiculously good pudding. A few other small things might be needed, but recipes are easily goggled up.

If you have eggs, butter, flour, sugar, baking powder and vanilla-- you could bake a cake or make brownies.

17. I made Sourdough Chocolate Cake. It's a two layer round pan cake,
but I dispensed with the icing and layers. It's very rich, has ONE CUP of oil, which could easily be cut back to 1/2 c, with perhaps 1/4 c of applesauce for more moisture and richness. It's VERY chocolatey. The recipe is from the sourdough section of the King Arthur Flour Co. 200th Anniversary Cookbook, my baking bible.

18. You can substitute 3 Tbsp. chocolate + 1 Tbsp. butter
for 1 Sq. baking chocolate. I have done it with brownies hundreds of times. Works like a charm!

21. Oh, and the cocoa I used was half Hershey's (ick, don't ask) and
half Equal Exchange, the hideously expensive organic fair trade stuff from Whole Paycheck, which was visibly a lot darker than the Hershey's, and smelled yummier.

I made sure to lick the bowl spotless.
