Italian sandwiches
I just got home from shopping and hubby was in the kitchen frying onions, red, yellow & green peppers in olive oil. The kitchen smelled heavenly.

I joined in by quickly breading and frying up eggplant slices.

We made sandwiches on Italian bread with a slice of mozzarella on top of the vegetables. It was the best late lunch I've had in years.

2. We didn't used to make eggplants very often
But we've decided it's going to be in our diet along with fennel much more often.

I've posted about sauteed fennel slices served open face style on toasted Italian bread. Oh my goodness but those are so good. Sweeter than I imagined. Didn't make them today but I keep them around a lot these days. Say, I wonder how they would be on a white pizza? Hmmm. :D

3. I think eggplant is one of the best things to grill
Their sponge-like nature seems to allow them to absorb more "grill" flavor than many other vegetables.

I don't have them often (I'm not much of a cooked vegetable person, corn and artichokes aside), but brushed with oil and seasoned and grilled is absolutely excellent. Or at least as much as a vegetable (corn and artichoke aside) can be.
