I always thought of pattypan squash as small green things
I won a silent auction bid for produce from a home garden, and included were some pattypan squash which are pretty big and yellow. The skin looks almost as tough as butternut or acorn squash. I'm thinking of stuffing them. Have any of you done this with summer squash? Hoping I won't overcook them and have the whole thing fall apart.

1. That's about the best thing you can do with mature summer squash
because the flesh tends to become dry and woody.

Stuffing them will be their finest hour.

2. That seemed to work fine.
The skin stayed flexibe, and turned out to be edible. Used hamburger, salsa and cracker crumbs to mix with the scooped-out pulp.

I was thinking using it in ratatouille, perhaps.
