I'd try making these but wouldn't it take hours to de fuzz a cup and a half of seeds?

Dandelion Seed Biscuits

Dandelion Almond Sweet Biscuits

Recipe from Prodigal Gardens. http://www.prodigalgardens.info

Ingredients

2 cups whole wheat flour

3 teaspoons baking powder

1/4 cup butter

1/2 cup almonds

1/2 cup buttermilk

2 eggs

1/4 teaspoon almond extract

1 1/2 cups dandelion seeds, plucked out of the flower head

Instructions

Put flour, baking powder, and almonds in a food processor. Blend almonds are chopped fine. Add butter and blend again until it forms a crumbly mixture. Add eggs, buttermilk, almond extract and dandelion and blend just until dough forms a lump. Shape into biscuits and bake on an ungreased cookie sheet at 450 degrees for 10 to 15 minutes or until golden brown.

Serve hot with butter and jam.

1. This is probably something that calls for flower heads
before the fuzz appears, when they're dark yellow and the seeds have been set but have not matured.

I'd think the fuzzy seeds would be a bit hard and bitter to do much with.

Still, it's something I doubt I'd bother to do. If you really want muffins with the texture of fleas baked in, try chia seeds. They're available at a lot of health food stores.

2. ROFL
I have a plethora of blossoms this year both yellow and now fuzzies. I already use the greens a bit but have always wondered what I could do with the rest of the little buggers.

3. oh...Dandelion wine

my tea-totaling grandmother made this - doctor recommended a glass a night for her heart.
And she always followed his advice. ;-)
