differences between honey and sugar? can you make jelly
with it? i know there is some differences in the candy temps, so assume step one is to equalize that part. but after you do that, does it work the same in most recipes? when doesn't it?

1. It throws the chemistry off a bit because it's a liquid
but it's entirely possible to use it in jellies. Just find some of the recipes there are online to use as a guide.

2. I would expect you'd have to cook
it longer to make it set up (if you're going pectin-free, that is)

But, other than that, sugar is sugar.

4. There is a Greek sesame
candy that I like

It's basically A BUNCH of sesame seeds, toasted, and then lemon, honey and water added in as a binder. Spread out on a cookie sheet about 1/4 inch thick. Dry out in a low oven, then either cut or break up like brittle.

5. sounds yummy
i used to make sesame brittle at xmas. but my daughter and i are not supposed to eat seeds and nuts. i did give up on that after several years, and find no difference, but she still doesn't.
i do make some cookies with nuts these days. i will have to try that one.

share that recipe? I had something like that years ago and tried making some but it
didn't turn out. I have a huge bottle of toasted sesame seeds and would love to try again !
