RESTAURANT OWNERS OPPOSE RAISING SERVERS’ LOW WAGES
When the horses are running at Keeneland or a conference invades downtown Lexington, Michelle Hollis, a server at DeSha's, can make as much as $25 an hour. On a normal night, it's more like $10 an hour.

That's not what DeSha's pays her. Like most servers, she earns $2.13 an hour from the restaurant -- that's minimum wage ($5.15 an hour) minus a credit to the restaurant for the money she earns in tips

1. Relying on tips to make ends meet is Blanche Dubious economy.
Always relying on the kindness of strangers for a decent income can prove, well, unreliable and nerve-raking.

... and actually might regard them as part of the business. Heaven forbid. The 'owners' sure don't want that. This way, the owners don't have to supervise their employees (the customer does it) and don't have to actually deal with anyone unhappy with the food.

There's nothing like having others do the dirty work. That's what Armies are all about. Right?

4. The former owners of Outback spent big $$$ fighting the Florida Min. Wage
Amendment. It upped servers wages $1.00 per hour. But to hear the owners they were going to have to close all the Outbacks in Florida if it passed. It did and they didn't.
