My homemade breaded chicken sandwiches are 100% better. A day or two in buttermilk is the key.

Biscuits, red beans & rice, and those pecan pies are tolerable. But there are years and years between visits.

Not so much now. There was a change in the 80's.

I do still like original recipe, dark meat only.

KFC thighs and breasts always seem to have a big splotch of uncooked batter lurking in the crevices somewhere. I hate that. Plus it's a little too salty for my taste. I love their hot wings (when they're fresh) and their pot pies, though.

I have a fairly iron constitution, but KFC is one thing that turns it inside out. I assume it is because "Kentucky Fried Chicken is one of the fast food industry’s largest users of MSG. This taste-exciting chemical (excitotoxin) is found in so many of KFCs products that it’s nearly impossible to eat a typical meal at KFC without ingesting it."

I can't speak of the health concerns of fried chicken, or other stores, but we turned out some good chicken. Our manager was a bulldog of a lady and she watched us like a hawk. The chicken is iced, not frozen and rotated and checked each day. The extra crispy is soaked in a brine overnight, breaded and cooked in open fryers. The original is floured with the secret recipe and cooked in pressure cookers. You had to wait till the temp was rising and at 350 drop the chicken. If you waited to long or dropped to early you faced the wrath of the manager. When done you had to lay each piece a certain way to drain properly.

I have eaten some sad KFC in my time, but at that store it was good!

But the best is my own. Spice it first, let it sit in the fridge a few hours. Then dip in buttermilk beaten with egg (the WHOLE MILK buttermilk you get down south or make it yourself), dredge in seasoned flour, and fry in peanut oil.
