I love stuffing because I only get it about 2-3 times a year and always between Thanksgiving and New Years Day

Also, shout out for pumpkin pie! I am using my grandmothers recipe. For years, my aunt was the pie maker but as she got older I started making them. It is not as hard as I thought. The hard part is really waiting to make sure everyone else likes them! I think I am improving with each one. And this is another thing my grandsons like helping with!

Hot turkey I could take or leave, but I adore the leftovers - cold white meat on toast with loads of real mayo. Or Ill make turkey salad with chopped celery and green olives and of course the mayo (Hellmans). My hips are a testament to my fondness for the stuff.

Man, this thread is making me hungry. I've just had spinal lumbar fusion surgery and am stuck in Convalescent Rehab over T-giving. I've requested family bring me a turkey sandwich with stuffing and cranberry sauce on it. This Rehab turkey dinner at $10 premium isn't going to hack it.
Miracle Whip
That's all we had growing up. Didn't even know what mayonnaise was. Grandmother used to tell us to get the Dukes out of the refrigerator. Use it for whenever mayo is called for when cooking.

What the heck is going on with turkey prices? I went shopping for a small (10 and under) turkey last Thursday. Found a 10 lb Butterball at Walmart and the sign said 98 cents a pound, so I grabbed it. It's usually hard to find smaller turkeys. Anyway, got to the checkout and they said, no, this is a "lil turkey" (what the package said) and that they are $1.89 a pound. I get a small turkey because really, I'm not that fond of turkey and it will only be 4 people attending. So...I'm paying a premium for a small turkey, which actually comes out to the same price or less than a large one?? If I got a large one, most of it would be thrown away!

(10,885 posts)difference in the world. No whimping out.
We do Arnold's loose stuffing mix, with Jimmy Dean sausage, chopped celery, onions and mushrooms, lots of sage. Mmmmmmm. (Note: I've been making this for 40 years and my kids still don't know there are mushrooms in it, which they swear they'd never eat. Shhhhhh!)
eleny
(46,166 posts)My family starts of with soda crackers, adding sauteed onions & celery, egg & veggie broth. Then add whatever else like giblets, sausage. I like to change it up and it's always a hit. My husband doesn't eat mushrooms, either, but he might this year!

(10,885 posts)the breadcrust.
The only meat my oldest son would eat as a kid was ham. So, we had pink ham (ham), brown ham (steak), white ham (turkey or chicken), beige ham (pork), ham swimmer (fish), and fried ham (clams). Have never figured his attraction to the word "ham". He's still fussy; over 40 and has never eaten a full hamburger, only tried a bite once. He can't stand "compressed" burger - no meatballs, burgers, meatloaf, etc., but no problem with tacos or in spaghetti sauce. Same stuff. Go figure.
eleny

Codeine
(25,586 posts)They raved about them and wanted me to make them all the time. I asked why they werent bothered by the mushrooms, as normally they recoil at the very thought.
They literally started crying.
The trauma of knowing they had happily eaten what they claimed to hate was simply too much. People are weird.
eleny
(46,166 posts)For him there's no flavor and the rubbery consistency (according to him) isn't even interesting. So he's like, meh. It's about the same with avocados. He doesn't get their point, either. I love both. My family was always one to go find wild mushrooms in the nearby woods. The flavors were always the point. And avocados, what can I say.
Oh, that's so funny that your kids actually cried over their eating onions. It's like their brains couldn't compute the whole idea of liking them after all. Thanks for the morning chuckle! That is too cute.
Codeine
(25,586 posts)Of course as we all know every recipe worth eating starts with dice one medium onion. Our solution has been to run the onion through the grater on the food processor turns into a bit of a mush, but the flavor is still there. He says as long as he cant see it then he can pretend it isnt there and everybody wins.

smirkymonkey
(63,221 posts)just with milk, butter, salt and pepper. No fancy ingredients. Just the traditional way with gravy or butter. I could eat them every day. The best comfort food in the world!
I only like stuffing if it has been started on the stove top and then baked in the oven so it is dry and crispy on top. I HATE mushy stuffing!
Freddie
(9,265 posts)I dont even put pepper in mine, people can add that at the table if they like. Potatoes, milk, butter, salt. No cream cheese, sour cream, garlic, etc. and NO white pepper - if it has to have pepper it should be visible! Added ingredients (such as cream cheese) make for a nice potato side dish but its not mashed potatoes.
The next day (if theres any left) Ill make Refried Mashed Potatoes. Melt a lot of butter in a skillet and sauté the leftovers, scraping the bottom of the pan often to get a lot of brown crispy stuff mixed in.
smirkymonkey
(63,221 posts)Except I saute a little onion in the butter and then throw in the mashed potatoes. They are so good! I love them with a brown, crispy crust!
Codeine
(25,586 posts)Throw them in a cast iron skillet with some oil and some (vegetarian) sausage and start squishing and frying until it forms a big crispy cake that I cut into wedges and serve with a tofu scramble.
Deelish, and probably just as good with regular sausage and eggs.

(16,785 posts)2 -2lb. Packages of frozen French Cut Green Beans
3 regular cans of Campbell's Cream of Mushroom soup (fat-free will do as well)
1/2 cup Heavy whipping cream
2 Tbsp. Low sodium Soy Sauce
1 can of the larger sized French Fried Onions....the other can for the topping
Combine all the ingredients in a baking dish. Bake at 350 ° F for 50 minutes. Take out and add the other can of Fried Onions for the topping. Bake for another 5 minutes until topping is golden brown. Let set for 5 minutes before serving.
You will swear you have died and gone to heaven. It is not Christmas or Thanksgiving dinner without this side dish in my family.

(34,386 posts)I know this will probably horrify all of the food safety people, but my dad always made the best turkey on the planet. He'd make a big bunch of stuffing using stale bread that he'd made himself & added lots of onions, celery & sage from our garden. He'd make a turkey broth using the giblets & neck plus a few chicken parts, along with celery & onions, adding a generous amount of butter at the end. Then he'd stuff it in the bird & all around it. He'd then cover the roasting pan with a tight-fitting lid and put it in the oven set to 180F or so at about midnight or 1 a.m. the night before Thanksgiving. The best thing about Thanksgiving was waking up to that heavenly aroma. About an hour before dinner, he'd remove the lid, baste the turkey with butter and up the temp to 375F or so to brown the turkey & the stuffing. I've never been able to duplicate it. In all of the 40 Thanksgivings I can remember, nobody ever got sick.
Freddie
(9,265 posts)Her house had a summer kitchen in the basement and she would cook the turkey (stuffed) overnight down there, leaving the main kitchen oven for all the other stuff (like GBC). She had a huge table in the finished basement and we would eat down there. At Christmas she would just put the leftover turkey outside and use Gods refrigerator to store the leftovers. Its amazing no one ever got food poisoning.
