Time for some research.

I always thought that the mercator map was just due to trying to fit a 3d globe surface onto a rectangular flat map.

4. The reason for the Mercator projection originally isn't what she said

it is that it preserved compass lines which was huge for the time in that compass lines was the only navigation method at the time. Now the reason Europe was centered on the map was likely exactly what she said but the projection itself had a very valid, non discriminatory reason to exist. I will also say the fact we still use it literally centuries after that was no longer a thing; is entirely due to making white countries look bigger.
