Or at least very close to the proscribed ingredients. I can handle maybe one or two things missing, esp. the celery salt. They're pretty salty even without that part.

If it ain't a poppyseed bun, forget it. And the mustard, sport peppers and green relish are non-negotiable as well.

(adjacent to Crawford's Department Store) in Rolling Meadows, where I had my first Chicago Style hot dog.
It was loaded with all the usual stuff and topped with celery salt. I was immediately hooked!

There were murmurs of a reboot, but it's done.

I used to work near the Vienna beef plant on Fullerton, and ducked in to dine in the cafeteria w/ employees hanging out.
Good times.

I saw it on No Reservations and Tony Bourdain loved the place. I'm surprised that review didn't keep it in business for a long time.

In a few interviews with the owner, he stated that he was closing up
to "move on to other things in life".

One of my favorite things from Doug's were the "Duck Fat Fries". They were only
available one day a week, and they were phenomenal.

He seems to be doing ok. So I feel good for him. I imagine HD’s was a pretty stressful operation—just coming up with the recipes and ideas would be a full time job. I remember one trip there were alligator sausages, bison sausages, and wild boar sausages on the menu alongside more conventional choices, and all topped with specialty cheeses or sauces. I am glad I got to experience HD’s as often as I did (though that was too seldom!)

One of the employees had started a spiritual successor to HD’s but it didn’t stick around.

EDIT: I may be wrong! This LOOKS very HD-esque even to the duck fat fries:

HD’s was something pretty unique and special.

(And yeah, the duck fat fries were worth the trip too!)

...or at least, I found it so when I visited a few years ago. The city was *so* beautiful and vibrant. It's downtown, and skyline, was even better than New York's--very nearly as big, but concentrated, its impact--rising out of the lake--reminded me of a fairy-tale. And--to be blunt--Wrigley has it all over Fenway. There. I said it. And Wrigleyville, at least during the baseball season, in normal times, is simply the most vibrant urban neighborhood I've ever been in. Then, of course, there are the hot dogs...
