So I'm cooking a Thanksgiving meal for one.

4-1/2 lb Chicken, stuffed and roasted. There will be a lot of chicken sandwiches in my future.
Creamed Onions and Garden green beans - enough for another meal later this week.
Loaded whipped potatoes - store bought.
For appie and desert - Cabbie Sauvignon

Lions and Texans on the tube....

Fixing the parts of Thanksgiving that I really love- the stuff that always runs out early. Turkey wings (brined), greenbean casserole, and stuffing deviled eggs. Lots of stuffing. Later, salad and apple cobbler. All for MOI.

But in truth, miss my family in another state. Phone calls will have to do.

He and his GF are spending their 1st Thanksgiving in their new home. But, given the moment, I had to bow out. I told him we'd do it next May....

It sucks, but it's the right thing to do....

Cooking a T-Day meal is a first for me. Getting everything done at the same time is something that I've never had to do.....hats off to those that make this day special....

I can make soup with it as well. I should have a lot of stuff stashed in my freezer when done.

My apple pie didn't turn out great, but I know where I went wrong. Next effort will be blackberry/blueberry.

It’s just the two of us this year. A small Turkey breast, sweet potato and roasted Brussels sprouts. Pumpkin pie for dessert. Football on TV.

I had roast chicken planned but found a small leg of lamb last minute. Creamed green beans, potatoes au gratin and rolls with plenty of butter. Cooking for my Dad and I.

A full, ten pound turkey. Planning lots of delightful leftovers.

Stuffing, in the bird, mashed potatoes, gravy, peas. I bought a slice of carrot cake yesterday for desert. I have some Louis Jadot Beaujolais Village and Gruet Blanc de Noirs champagne.

This is not the first time I've done a full turkey just for myself.

The problem is that too many people only do it once a year, and within the context of making seventy-eight other dishes.

I love turkey, and when my boys were growing up I'd fix one every month or every other month. They'd come home from school in the middle of the week to a basic turkey dinner.

And I love the flavor of a full turkey, rather than just the breast.

Doing a simplified menu - turkey breast with sausage stuffing for one, accompanied by mashed potatoes, fresh asparagus, and whole berry cranberry sauce, to be washed down with a nice Pino Grigio.

The 3-way video call has already taken place since my son's family is in a time zone 6 hours ahead. Even with the distance, the brothers still got to joust with each other in true holiday tradition. There are some things that COVID can't change!

Looking forward to my late-night turkey sandwich...yum.

tonight, will fix the full bird with dressing, yams & leftover mashed potatoes tomorrow. The chicken will make several meals & I plan on using the breast meat in a chicken pot pie with mixed vegs & cream of chicken soup.

Today is a roast, potatoes, squash and am experimenting with cabbage dishes. 1st up, slaw with vinegarette base.

Now we are convinced we need fish tacos for the slaw. Haha.

it's just the two of us today. Mr. Mossfern fulfilled his duties yesterday by picking up some bbq brisket. I'm making corn fritters, mashed potatoes, candied sweet potatoes and garlic sauteed broccoli. We have a pumpkin pie for dessert. Finishing my first shot of tequila to put me in a festive cooking mood.

Did a 3 lb turkey breast and I swear it's the best turkey I've ever cooked. I'll never do another whole turkey for less than 10 people. Found an on-line recipe. Put the breast on a bed of celery, carrots, onions and dry white wine (pinot grigio); rubbed the skin with rosemary, sage, thyme, garlic, salt & pepper, olive oil; spread a mixture of lemon juice and olive oil under the skin. It was so moist and flavorful!

Added bacon, mushrooms, celery and onion to boxed stuffing mix and cooked it in a covered casserole in the oven with the turkey breast. Regular mashed potatoes with butter and milk. And I have leftovers!

Made pumpkin pie yesterday.

He had Thai and Indian food, while I went overboard for me and the wife with Ham, sweet potatoes, green bean casserole, mashed potatoes, best dang gravy I ever made, corn, rolls and a blueberry pie for dessert...

I had one plate and called it quits...lots of leftovers, so no cooking for the next few days.

After walking through the local park and exchanging a few words with a few of the homeless, I am counting my blessings that I had something to eat today.

Just the Two of Us and our two cats, but I am thankful for that. We just had turkey sausage and boxed stuffing and turkey gravy. Ice cream floats for dessert.

I thought I would broaden my knowledge this Thanksgiving and study up on the pilgrims and the supposed first Thanksgiving. I will just say that ignorance was Bliss.

waiting on a turkey pumpkin lasagna in the oven right now. There will certainly be leftovers, which will make great lunches to take to work in the weeks to come! Side salad with leafy romaine, bacon bits, feta crumbles, candied pecans, and poppy seed vinaigrette. Dessert is a coconut milk-based salted caramel ice cream, with "chocolate thumbprint" cookies - the kind with the big Hershey's kiss in the middle.

Being part of an online community couldn't be better, when dealing with circumstances like this.

Their group are potlucking Thanksgiving dinner among themselves. I made a dish of brussel sprouts w/bacon n pine nuts w/basalmic glaze for her part. We shared the hind quarter, stuffing, beans, mashers, and gravy I whipped up earlier before she left.
I have prepared and taken in to te ER crew the whole meal in the past. No can do this year but still get to share vicariously.

A friend is cooking just for himself and did a Duck L'orange! It looked amazing in the photo...
I don't think I have duck (perhaps a bite), but if you love to cook (like he does)... ENJOY your day...

Sounds like we have each figured out something good to eat for the the holiday meal. All sound yummy. My stuffed acorn squash is still in the oven. The bubbly will be cracked soon. I miss being with the kids but we will all survive. FaceTimed the grandkids - one of them was sticking left over pie crust all over his face ....

I am thankful for good health, the means to take care of my needs, and the knowledge we will have a great president and vice president in place very soon.

so I stuffed it, rice, gravy, and heated rolls. I have been doing low carb so all of this, except the meat, is stuff I haven't been eating. Dishwasher is running, food put away. Dog and I will split stuff. I forsee him being very happy for a few days. He already got the gizzards, heart, etc and some white meat today. Glad I can cook it would have not been great if I couldn't.

I’d love to know how you make your creamed onions!

We usually have a crowd and while I miss it, I’m enjoying this quiet day. Just the husband, my teenage son and Willy...a developmentally disabled adult who lives next to our shop. Willy is retired and we’ve had him every Thanksgiving and Christmas for 30 years. He’s at our shop every day so he’s in our small safety bubble. I didn’t roast a turkey because...4 people. I have a dry brined chicken on the grill...garlic mashed potatoes and miso glazed asparagus. Creme brûlée for dessert. I have been sad off and on about the holiday, but this is the right thing to do.

I was going to have takeout fish tacos, but I took my dogs to the dog park and we stayed too long. The restaurant was closed, so pizza for dinner. Fish tacos can wait for another day.
As many of you have mentioned, feeling so relieved after our Biden - Harris win. Those two are going to be great! Also, I'm grateful for Democratic Underground. I've been a lurker since 2004.

After a 9 hour day with my son and daughter-in-law helping with all the extras and cleaning up, i was exhausted. I long for my kind of dressing and gravy. If I can't have that I would love a seafood dinner (lobster, crab, or shrimp) . I love both of them, but we have different tastes and I am missing some of my personal favorites.

Maybe I need to make a plan for Christmas and do it my way alone.

I'm glad you made the day special, including the football game, and that you share it with us.

My daughter had to work, so we are having Thanksgiving today!

The usual: Turkey breast, gravy, stuffing with sausage & celery (no potatoes), butternut squash. Plus homemade pecan pie and lemon pie.
