Today's DU (processed pasteurized) Cheese(like product) of the Day.....Velveeta

In honor of Independence Daym there was no way that today's cheese du jour was going to be some kind of stinky, French cheese. In the stead, it's Velveeta a hallmark of holiday platters throughout the land.

That's right, I buy Velveeta. I use it to make cheese sauces. I often use in combination with a sharp cheddar or other "real" cheese. I appreciate it for its melting and emulsifying qualities. Better living through chemistry, you know.

9. Beefy Salsa Macaroni and Velveeta Cheese

1 lb ground beef
16 ounces salsa
2 cups water
7 ounces elbow macaroni
1/4 lb Velveeta cheese, cut up

Directions:

1
Brown meat in large skillet. Drain.

Add salsa and water. Bring to boil.

Stir in macaroni.

Reduce heat; cover. Simmer 8-10 minutes, or until macaroni is tender.

Stir in Velveeta until melted.

I still will eat either one in the right context. To this day I still think Velveeta makes the best cheese sauces for those casseroles like my mom used to make. It isn't the only cheese I cook with, but I do use it for certain things.
