Today... I'm starting by frying some pastrami in butter...

I like to get it nice and crisp. Then an egg over easy in the same pan. Plop them both on some toasted potato bread... Nice cup of cold brew coffee on the side...

But next time I have some leftover pastrami ...

They seem like acceptable substitutes for bacon, maybe.
