How do you make a spritz? I got a recipe for an Italian Sunset from a bartender on a Princess Ship.

1 oz Aperol
1 oz gin
3/4 oz lemon juice
1/2 oz simple syrup
some bitters

Shaken in a cocktail shaker with ice. Served in a martini glass with a piece of orange rind circled around the rim.

The bartender nearly slapped my wrist when I tried to pick up the drink before he'd done the thing with the orange rind.

Ice in a wine glass.
3 parts Prosecco. 60 ml
2 parts Aperol. 40 ml
Splash of fizzy water. Tablespoon.
Garnish with an orange slice.

I have seen one to one Aperol to prosecco but the 3 to 2 or 2 to 1 is better.
