It's in the freezer.
I plan to brine it for 24 hours and then smoke/cook it using chunk charcoal (NOT briquets) and pecan wood.
We'll see.

(12,132 posts)in honor of him I make this every Super Bowl. It was the first thing I remember him ever showing me how to make. Of course, I call it "Dad's" because that's who showed me - I'm sure he got it from somewhere:
brick of Philadelphia cream cheese. Only Philly will do. Store brand can go piss up a rope.
lemon juice
can of crab meat (By the tuna. not sure weight of can but it's the regular sized can like the tuna)
spoon or two of crushed/chopped/minced/however you like it garlic
Worcestershire sauce
salt and pepper
I often double it with 2 cans of crab and 2 bricks of cream cheese. I always go through the crab meat carefully feeling every little bit to get out bits of shell and fins.
ETA~ Drain the crab. I squeeze as much moisture out as I can.
mix it all up a day in advance if you can leave it that long. I try not to eat it all the day I make it because it really is better the second day. I eyeball the measurements other than the brick and the can. I like my Worcestershire so I go heavy with that. Go easy on the lemon juice at first then add more if you need to.
I mix the Worc. into the cream cheese (leave it out on the counter to soften of course. You cook type folks prolly knew that already) until it looks pale brown then add in the crab then the rest a little at a time and taste along the way.
I eat it on Triscuits because that's what Dad did. It's the only time I eat Triscuits and Triscuits are the only thing I eat with it. REGULAR triscuits. Don't go tryna get all fancy with goofy flavored/low salt/etc Triscuits.
Of course, I can't tell you how to run your kitchen but it ain't Dad's if it ain't this way.
