just be dry leather. a good ribeye is sublime, but no effing way would I pay $40 for a steak (that I had to prep myself)

were they kobe beef or grass-fed organic white buffalo or something?

you can get fine ribeyes at costco, or jsut about anywhere - look for choice (or prime) if you can, and about a pound bone in is a plenty big steak. I wouldn't pay over $8 or 10/lb for prime and personally don't. If I see them on sale for around $5 or 6/lb I stock up. around xmas when the rib roasts go on sale I usually get a couple - and have at least one cut for steaks.

they are fatty, both edge internal, but also marbling - and that is what makes them pretty much fool-proof. even if you overcook them they are still edible. bone in gives more flavor.

was my favorite, but been years since I've cooked for family daily, and since I've bought steak. Was reasonably priced when I used to buy them. I do chicken now (dark meat,) fish, and beans + vegs!
