Stars come in every colour from brown to white (ignoring black holes). You can't see all the stars in the sky because other junk in the way. That's why stars twinkle. You have ever more trouble seeing the stars because the atmosphere is in the way. During daylight the atmosphere refracts sunlight. Because of all the water in the air it tends to refract blue when there aren't clouds in the air.

I gave a simplified version of this as the answer to "what colour is the sky" in grade 3 and got in sooooo much trouble.
