(2,805 posts)They really select their cheeses for certain qualities.
They may get their Mozzarella from one company and their Ricotta or Provolone from another but they are selecting the best cheese for the mix. Always a bit oily for me and I always use napkins to absorb the excess grease, but there is a reason they choose the cheeses they use (flavor). I appreciate their attention to detail.

(12,723 posts)We had a local place that made great pizza and not greasy at all. Of course it helps if they use good cheese and you don't eat meat.

(4,851 posts)with the best flavor, produce the most grease. Certainly each person should choose whatever they want, but as one who has worked in pizza places in NYC for many years, the expensive cheeses certainly produce a lot of grease. I am of the opinion that the better cheeses do produce more grease, but everyone whould eat what they like best. Buyt the quality of the cheese has nothing to do with the grease. some of the highest quality cheeses produce a lot of grease on pizza. If you do not like it, you can certainly buy high quality low fat cheese that does not.
Also, for pizza, the greasier the better for me.

My wife blots hers though. It's OK - I squeeze her greasy napkin onto my pizza.
