Corn flake-crusted chicken strips with honey-mustard sauce

Prep time - 15 mins
Cook time - 15 mins
Total time - 30 mins

Crispy corn flake crusted chicken strips served with an easy honey-mustard dipping sauce is the perfect easy game day snack or casual appetizer.

Serves: 4
Ingredients for the corn flake-crusted chicken

4 boneless, skinless chicken breasts, sliced into long strips
1 cup flour seasoned with salt and pepper
2 eggs, beaten
2 cups corn flakes, crushed
½ teaspoon smoked papriks
1 teaspoon dried oregano
1 teaspoon salt
pepper, to taste
oil, for frying

for the honey mustard dipping sauce
1 cup good quality mayonnaise
2 teaspoons Dijon mustard
1-2 teaspoons wholegrain mustard
2-3 teaspoons honey (to taste)
juice of ½ lemon
salt & pepper to taste

Instructions

To make the chicken strips, place the seasoned flour, egg and corn flake crumbs in separate bowls. Add the paprika, oregano, salt and pepper to the corn flake crumbs and mix well.

Coat the chicken strips first in the flour, then in egg and then in the corn flake crumbs. For an extra thick coating, you could repeat the egg and corn flake steps but you might need more of both egg and corn flakes.

When all the chicken is coated, heat enough oil to fry them in a deep frying pan/skillet.

Fry the chicken until golden brown on both sides and cooked through.

Remove from the oil and allow to drain on a piece of kitchen paper.

To make the honey mustard dipping sauce, combine all the ingredients and mix well.

Serve the hot chicken strips with the honey-mustard dipping sauce.

I am trying to keep a sense of humor about this, so please bear with me.

I have instructed the moderators to lock new threads about chicken. If you must discuss chicken -- and, yes, I understand it is a *vitally* important topic in which you all have an intense interest -- please do so in one of the threads that was opened previously. Here's a good one:

I think that some of you are well aware that the discussions about chicken are not about chicken at all. The purpose of these threads is to dig up an old flame war and wave it in the faces of certain people, because you want to get under their skin. To their credit, those people have not taken the bait. But we really think that a dozen threads on a topic specifically intended to bait people is really enough.

But now we are in a completely idiotic death-spiral of enforcement and boundaries-testing. The mods lock a thread, and then three spring up. And so the purpose of starting threads about chicken is no longer about tweaking a few of your fellow DUers, it's now about tweaking the moderators.

And then I get incredulous emails from people who are shocked, shocked that discussion of chicken -- chicken fercryinoutloud -- is not allowed. As if the discussion of chicken is something that is vitally important and that everyone is really interested in.

So please, if you really need to discuss chicken, do it in one of the threads that is already open on the subject. But please stop posting new threads about chicken or turkey or whatever. I know it's really fun to tweak people, especially when those people are the moderators, but I think it's time to find to something else fun to do.

I sometimes use ground up rice krispies instead of bread crumbs. There's no gluten, and it's tastier, ya know?

Corn flakes would add crunch. I'm going to try.
