I'm partial to Chicken Matzo Ball Soup accompanied by Chopped Liver on Rye with Deli Mustard.

I spice my Progresso up with basil flakes and a splash of Balsamic vinegar. Sometimes sprinkle in a little Parmesan or Asiago.
Also, love a couple of extra chips of Bread & Butter pickles on the tuna salad sammy! 
Mama at home in TN always put chopped sweet pickles (I think little sweet gherkins) in tuna and chicken salad, and that stuck with me. I really love the store-bought bread & butter variety (my folks made those then I was a kid).
I like using the Balsamic vinegar in all sorts of dishes to add a little tartness and to help me cut down on salt. Getting older (70 now) has forced me to make dietary adjustments, but I'll find ways to re-calibrate the taste to old-timey with something, LOL.
Also, a nice change of pace is celery and/or apple bits, chopped same size as the relish.
But...the biggest question:
Miracle Whip or Mayonnaise
..."nothing but Dukes!" (I do grocery shopping for her).
She even likes banana and mayo sandwiches! Bleh...
I always loved celery and pimento & cheese!

How could I forget the pickle? My daughter and I go to a lunch-time-only deli where they give us extra spears without asking. Love them!
samwidges. It drove me nuts. "Spacial samwidges". 
I was once in the hospital for surgery, just had to stay overnight. When I was conscious, they asked me what I wanted to eat (I'd had to "fast" ), gave me a choice of a whole dinner, a snack or soup and a sandwich. I chose the soup and sandwich - and say what you want about hospital food, this combo was exactly what I would have picked.
My mother would grind the liver, add an egg, some salt, pepper, and sage. Form into 1" to 1 1/2" balls and drop into a clear beef broth. I use beef base ("Better than Boullion"
with a little dried parsley. Get the broth very hot, and drop the balls into it - they cook very quickly.
Let me know if you find a good recipe. My Mother never would write anything down.
Edit: I forgot the finely chopped onion!
Love super spicy chili with peanut stirred in!

It's now a Sushi bar. 
Our now defunct deli made their Matso soup with one huge ball in the bowl.
A lot softer and safer for a 70-YO tummy (and brain)!
Had to drop my beloved hot sauce, too. I cheat occasionally, too, just to be reminded why.
