A Carpet of Coots



Coots are medium-sized water birds that are members of the rail family, Rallidae. They constitute the genus Fulica. Coots are not ducks, and are considered inedible. (Wiki)

Place the bird in a kettle of water with a red building brick free of mortar and blemishes. Parboil the coot and brick together for 3 hours. Pour off water, refill the kettle and again parboil for 3 hours. For the third time, throw off the water. For the last time add fresh water and let the coot and brick simmer together overnight. In the morning throw away the coot and eat the brick.
