Ideas/recipes for a pot luck?

Hello all,

Haven't posted here in a while. I have a pot luck coming up next week, and I need to bring a side or dessert. Do you have any recommendations for something that omnis might find appealing, too? Some of them think that I munch on nothing but carrot sticks (and I don't even like raw carrots!)

I was thinking of, perhaps, stuffed mushrooms. Any ideas?

My friend brought falafa cups last night...philo dough baked cups with falafal/tomato/lettuce with sauce dishes. And of course, the best standby is brownies. Have fun!

had a pot luck years ago, a vegetarian brought two huge pizzas, one with white sauce and the other red, that had different things on every 2 slices. For ex the red sauce one had 2 slices with mushrooms and olives, 2 with onions & green peppers, 2 with just gobs of extra cheese etc, and the white one had 2 with artichokes and some kind of small fresh green leaves (basil?),... well you get the idea. There was something for everyone.

The mushrooms sound the easiest to make of all these and the quickest to cook in this heat, so yes I guess that has my vote now, too.

5. Butter Bean Salad

I think I got this recipe from Rachel Ray's website some years ago. Made it once for a pot luck and it was wonderful.

2 cans 15 oz each butter beans, rinsed and drained.
1/2 red bell pepper, diced
1/2 green bell pepper, diced
1/2 red onion, chopped
2 cloves garlic, peeled and minced
1 teaspoon ground cumin (about 1/3 palm full)
2 tablespoons extra virgin olive oil
2 large lemon, juiced
Coarse salt (kosher) and freshly ground black pepper.

Combine all ingredients in a medium bowl. Toss to coat beans and veggies evenly in dressing.

There's a 2003 copyright notice to the Television Food Network.

It's really good. Fresh tasting and slightly different because of the cumin. As I recall there were no leftovers.

Easy to make, and absolutely nothing to heat up!

I think I'll save the stuffed 'shrooms for me, and take this to the potluck!

is "Mouth-Watering Stuffed Mushrooms" by Angie Gorkoff at allrecipes.com. We make these mushrooms as an appetizer on Thanksgiving and even people who don't like mushrooms like these. The only change to the recipe is to use 1/8 tsp cayenne pepper rather than 1/4 tsp.
