What's for Dinner, Fri., April 9, 2021

I pickle brined some chicken, so I'll be searing and roasting it. It will be flavored with red pepper and dill.

It's kinda' cool tonight, so I think I'll make cornbread stuffing to go with it. I'll added pancetta for flavoring.

Tossed green salad.

Dessert: a mug of my fave spicy-sweet tea and a shortbread cookie.

I already ate. I skipped lunch. Had to make room in the freezer for the corn beef I bought yesterday.
