What's for Dinner, Sun., July 4, 2021

I have two chicken breasts in buttermilk, but soon I'm switching them over to a marinade before I put them on the grill.

The marinade is: soy, bbq sauce, olive oil, peanut butter, Worcestershire, chili, onion, and garlic powder plus freshly grated ginger root.

Tossed green salad with daikon radish, scallion, red pepper, and cucumber.

Dessert: "coffee and cream" chocolates with milk.

one with fried okra and the other with Potato salad and some hot vinegar sauce & regular hot sauce.
I am picking it up at 6:30

This was our traditional July 4 dinner way back when except we got the BBQ and sauce from a very tiny BBQ place in our small town. KozyKorner was the best stuff and is my standard for good que.

Memphis Style means coleslaw on the sandwiches.

The okra and potato salad are absolutely awesome

tater salad, cole slaw and beer. Along with anything else the neighbors bring to our get-together prior to watching fireworks.

This is a working night for TJ so we don't have a dinner.

I'll have some leftover cabbage and whatever else in the 'fridge strikes my fancy. There is still some watermelon!

Earlier today FLFC smelled the pork loin in the crock pot and was disappointed that it wasn't ready. He had some watermelon and steak trimmings. He then wandered off grousing and took a nap. When I finally had the pork cooling and was preparing to shred it, guess who appeared underfoot.

8. Grilled halibut

A with garlic herb compound butter…big green salad and a cast iron rosemary focaccia that I made on the grill because I didn’t want to fire up the oven. It turned out pretty good!

I’ll be making a lot of halibut in the months ahead…my guys were just up in Alaska fishing for a week and they brought home 170lbs of fillets. If anyone has favorite halibut recipes they’d like to share…I’m all ears!
