Plant-based recipes

I've been vegetarian for a few months now, and it's growing monotonous. I don't miss meat at all, but I'm not enjoying what I cook. Does anyone have ideas for low-fat vegan recipes that you really like? While I'm not fully vegan, I am avoiding eggs and cheese.

BTW, does DU have a vegetarian group? I couldn't find one.

I think messianic factionalism did it in. I know I noped out of there pretty fast and I'm probably not the only one.

I'm not a vegan, either but many of my meals are still meatless.

interesting recipes and he doesn't preach. Otherwise, look into Middle Eastern cookbooks: they have a lot of vegetarian recipes, as do Indian ones.

Eggplant parmigiana with vegan cheese?

Portabella mushroom burgers? Season and grill a large portabella in place of burger. Mmmm!

Wheat berry chili? Can use plant based “burger”.

based on your recommendation. I get her newsletter but haven't wanted to pay for the blog. Besides, a cookbook is easier to use.

Did you know that Sweet Potato Soul has a YouTube channel? https://www.youtube.com/results?search_query=sweet+potato+soul

I also like the Rainbow Plant Life YouTube channel. https://www.youtube.com/channel/UCDbZvuDA_tZ6XP5wKKFuemQ

Dr Greger's web site is loaded with good info also. https://nutritionfacts.org
He is a medical doctor who goes thru the research on what works and what doesn't in the plant based way of eating. Free subscription with no ads. I donate cause I like the content. Good stuff and real science. I see what works and eat/cook that.. Works for me!!
