Recent food prep

On Thursday, I made dip and cleaned a head of cauliflower and a cuke. I also made an artichoke salad, using canned artichoke hearts, fresh roasted garlic bulbs, garlic stuffed olives, calamata olives, capers, and a yummy basil pesto my daughter made. Very rich and a little is very satisfying.
Yesterday, I made vanilla chia pudding with almond milk and Stevia. Today, I made hot peppers stuffed with Swiss cheese, and roasted a butternut squash. I also cooked some black-eyed peas with onions, okra and bulk sausage I made from pork loin.

Lots of fresh veggies at the farm stands, and since school has started, lots of time on my hands
