New dish for me.-One Sheet Pan Roasted Za'atar Chicken and Potatoes

(I added carrots for more veggies. I would add zucchini at the half way cooking time if you want a more Mediterranean diet style.
Ingredients
6-8 pieces of bone-in, skin on chicken (thighs, breasts, drumsticks)
6 tablespoons olive oil
3 tablespoons lemon juice*****see below
2-3 tablespoons za'atar
1 teaspoon garlic powder
salt and pepper to taste
16 ounces red baby potatoes, halved (see notes)
fresh thyme, optional

Instructions
Position a rack near the center of the oven and preheat the oven to 400F. You can line a sturdy baking sheet with heavy duty foil for easier clean up if you'd like.
Combine the olive oil, lemon juice, 2 tablespoons of za'atar seasoning, and garlic powder in a zip-top bag. Give the marinade a taste. If if the seasoning is salt-free like mine was, add in 1 teaspoon or as desired. Add the chicken pieces and the potatoes to the bag. Seal the bag and give it a good shake so the marinade evenly coats the chicken and potatoes. Allow the chicken and potatoes to marinate for 20 minutes or up to 3 hours (see notes).


Spread the chicken and potato pieces out onto the prepared baking sheet. Sprinkle the remaining tablespoon of za'atar on the chicken and potatoes. You could even sprinkle some chopped fresh thyme on top of you'd like.
Bake the roasted za'atar chicken for 35-45 minutes or until the internal temperature registers 165F, you may need to turn the baking sheet half way through the baking if your oven has heat spots. Sprinkle with fresh parsley and lemon slices or wedges, serve warm.

***** I used half the suggested lemon juice in the marinade, from past experience, to my tastes, too much lemon juice is overwhelming.

1. Yum! Za'atar is my new favorite thing!

My daughter's BF is Lebanese and he introduced me to it.

I will definitely make this. And I would add more veggies as well.

5. Can you tell me what it tastes like? Is it a blend of spices? Spicy hot or mild?

I've liked another Lebanese dish, but I've never heard of Za'atar.

6. It's a blend of spices

Not hot spicy at all. The one I have contains thyme, sesame seeds, sumac, oregano, marjoram, coriander, chili pepper, cumin, and sesame oil. There are various different mixtures of herbs and spices, as I understand.

3. I do a mini version of this for one person

I use my counter top Breville oven with a 1/4 sheet pan.

One chicken breast
one or two small potatoes
whatever veggies on hand

Toss it all with olive oil and whatever seasoning. Right now, I'm on a Greek Freak spice blend kick.

Cooks in 20-30 min.

I do have some za'atar in the cupboard. I'll try that next. Thanks.
