Roasting some chicken breasts, cabbage, carrots, onions and mushrooms. I made some mushroom stuffing and put that in with the rest of the food. As soon as it comes out of the oven, I'll put a small pumpkin in to roast and make pumpkin souffle later. After I eat, doing a pile of dishes Of course :/

(33,643 posts)Soup is a veggie stock I made yesterday with celery tops, italian parsey, coriander and pepper corns, 1/2 garlic clove, 1/2 onion, 1 carrot, a leek stock, and sprig of fresh thyme. Simmered a few hours and strained. Added a bit of chicken bouillon to richen it up a bit and salt it.
Then I got a rotisserie chicken, stripped it, and boiled the bones and some of the meat for a couple hours in the stock.
Then added roasted yellow squash, roasted carrot, partly cooked celery & russet potato, frozen corn and peas, and the rotisserie chicken. Simmering now ...
Going to be straight bomb

(113,771 posts)I had to explain to someone recently that one can indeed make stock with the rotisserie chicken carcass. Just shook my head.
