Vegetable soup and cornbread. I might put sliced garlic herb pork sausage in the soup. I'm experimenting with using V-8 in the broth.
The cornbread will have green chili peppers and chopped cheddar cubes in it.
I went to the greengrocer yesterday and bought all kinds of interesting vegetables for this.
I might make pistou to go in it, too.
Dessert: maybe a piece of pineapple cake and a tangerine.

(1,850 posts)So it's all about the comfort food, some stuff I don't usually keep in the house. I cook and freeze a fair amount, and decided to raid my freezer during this storm, but I did get a lot of fresh veggies to supplement, and some frozen pizza. I will have leftover shepherds pie from yesterday, with extra side of sauteed green and yellow beans with mushrooms, sweet onions, garlic and pepper. I defrosted some chili I'd cooked and had some for lunch.
I will defrost salmon for supper tomorrow and saute more of the veggies I mentioned, and defrost some frozen baby potatoes I cooked for the holidays. I have frozen pizza and frozen quiche for lunches, along with the chili and other soup. I've got some nice bread, which I don't usually keep, and some cheese. Got a bag of oranges, and assorted nuts, and some pralined pecans, and dark chocolate covered almonds to snack on, and some milk to make hot cocoa, and will have homemade brownies for dessert. I love adding marshmallows and whipped cream, but I didn't want the extra carbs or calories so didn't splurge on those items.
Sure hope I don't loose power after the storm hits. I've got a fondue pot I've used the few times we lost power, to boil water, heat soup, milk, and other stuff, cook pasta, etc.
The cornbread sounds fabulous. I've enjoyed that type before, with chili's for a mild kick and a bit of cheese. I do avoid breads and minimize carbs because of blood sugar issues. This storm is a good excuse to indulge a bit.
