What's for Dinner, Tues., Febr. 8, 2022

I am excited about having my pumpkin soup again, the one I made two nights ago. One thing that made it so good was the toasted pepita. Also I used mascarpone in it, which almost always makes a soup spectacular.

To go with it, I have some basil-tomato chicken sausages in the slow cooker. I like to roll them up in a softshell tortilla and dip them in mustard.

For dessert, yellow cake with a chocolate-nut Elevation bar. Cup of decaf vanilla nut.

Oven baked bean with kielbasa and onion in them, homemade coleslaw, Jiffy cornbread with niblets added.

I'm also making a chili relleno casserole...there were some gorgeous poblano peppers at the store this weekend...I just had to buy them.

5. Turkey fritters, creamy green bean soup

I topped a fritter with homemade ranch dip and chopped green onions. The soup has green beans, red potatoes, onion and some chopped smoky links, plus a mix of spices. I used a can of evaporated milk to cream it. Leftovers galore

Chicken and re-fried beans in a flour tortilla topped with cheese and enchilada sauce.
Sour cream and guacamole too.

FLFC slept through our dinner but as I was posting I heard him moving around. I see that he has made it to his high perch on the couch. He is crunching on treats on his pillow. He doesn't make it up there often lately.

of chicken, collard greens and canellini beans with vegetables. Collards have a unique flavor and are not for everyone, but this long simmered soup is delicious!

9. leftover Chinese takeout

We did our grocery shop today, so we'll be back to home-cooked meals tomorrow. I think this is the latest we've ever done our monthly shop. We were getting down to the bottom of the freezer.

scalloped potatoes and peas It's a family classic - the more bacon and onions, the better, LOL! - but, still, don't all groan at once!

Peanut butter cookies and beverage of choice from the coffee pot and fridge. Then hit the bottle of Mead wine while watching the skiers and snowboarders.
