That's the base dish for now. A fridge rummage will determine the side dishes...likely to be tomato / red onion salad, toast w/diced olives and cream cheese.

Hmmm...


Bacon sandwiches with a vegetable patty.

On the side we have corn on the cob and kale in a honey balsamic reduction.

5. I splurged on a Papa Murphey's pizza

Nothing all that special, but I passed the 100 lbs lost mark on Weight Watcher's today, so I thought it would be nice to not cook. I now have 3 more meals from that pizza and it was great (tomato and extra jalapeno with my favorite habanero hot sauce on it). Some watermelon for dessert.

Now I'm off to listen to a local band at the coffee shop down the road and have a nice micro brew on tap.

I basically made a simple fajita with the veggies and seitan - some garlic, cumin, oregano and chili powder, then served it over quinoa and brown rice. I made a little bed of spinach and cherry tomatoes underneath.

It was really light, fresh and yummy!
