What's for Dinner, Sun., Mar. 13, 2022

Cream of Mushroom Barley Soup. I used both fresh and dried mushrooms. It also has dry sherry in it. I used mascarpone instead of sour cream.

Thinly sliced ham on a baguette. I made Thousand Island dressing to use instead of mayonnaise.

I found the recipe in my Eating Well cookbook, but I found they had it posted at their web site, too.

Dessert is hot wild orange tea with fig-almond biscotti.

I'm braising beef ribs 6 hours w/dried and roasted onions, pepper and salt on top and beef stock for the liquid. Au gratin potatoes and peas. Maybe a slice of strawberry cake for dessert.

We had Sunday dinner w/ Dad & Sis. She made a pot roast w/ all the proper stuff: potatoes, carrots and green beans. She also made a lovely coleslaw.

Dessert was my sour orange pie. The verdict. It was good. I don't think I would make the pie for myself again w/o tweaking the recipe a bit. It was a lot more sour than it was orange. I think I would omit the lemon zest from the recipe or exchange it for one more tablespoon of orange zest. I also think I would make my whipped cream a little sweeter than I normally do.

It's not a bad pie. The one I made probably tastes the way it's supposed to taste. I would just prefer more orange flavor.

We’re trying to empty our refrigerator in our apartment since we’ll be traveling for a couple of weeks. Tonight we’re having the leftover meatballs.

Meatball grinders with marinara sauce and onions topped with mozzarella then broiled to melt the cheese. Mixed green salad as well. Dark chocolate and red wine for dessert.

Two pink grapefruit with a teaspoon of sugar on each hslf.
Chili. I had a container frozen since november. Still pretty tasty with a little extra mccormick dark chili powder dumped in. With buttered nabisco crackers
And A coke.
Dessert was a pack of watermelon sour patch kids.
I should have skipped dessert.
