Pampushky are fluffy, soft Ukrainian garlic bread rolls. Ukraine was known as the breadbasket of the Soviet Union, and both garlic and bread are staples of the cuisine. These rolls are traditionally served alongside borscht; the garlics sharpness compliments the sweetness of borschts beets. Garlic + bread is such a common side to borscht that my own grandparents would often simply eat slices of brown bread and whole raw cloves of garlic with their soup.

(3,421 posts)I buy mine at local farmers markets and there is a great difference in the flavor and pungency of different varieties. Roasting whole cloves seems to bring out the flavor I enjoy most and takes the bite out of the really strong ones.
Those rolls look and sound superb, I will try the recipe soon, thanks for posting. 😊

(1,701 posts)They turned out ok I think. I didn't have chopped fresh dill, substituted 1/2 tbsp dried tarragon leaves and some perfect-pinch Italian seasoning. Used minced garlic, added a shake of garlic powder too. No sunflower oil, used olive. So, not completely traditional. I was a bit worried when I saw 25-30 mins baking time - they were golden brown at 15. I didn't want to undercook though - but the tops were hard at 20 mins so I pulled them. Of course the garlic oil softened them right up - they were soft inside but not doughy, probably could have let them bake a couple mins more.
