My friend is here and we're also having a coffee cake she brought: almond. That's dessert. Tea for her and vanilla nut decaf, served cold, for me.

I made the sauce first so the ingredients would meld together. It's made of Dijon mustard, olive oil mayonnaise, minced garlic (from a jar), salt, pepper and a splash of Worcestershire sauce. I let that sit for a couple of hours before I prepared the chicken breasts.
The boneless breasts were pounded flat with our new kitchen hammer. (I don't know what happened to the old one!) Then I swished some of the sauce onto the breasts followed by a thin slice of Swiss cheese. Atop that was a thin slice of prosciutto di Parma then another slice of cheese. Then another slice of the ham and a final slice of cheese. Then the whole thing gets rolled up tightly and bound in plastic wrap and refrigerated.
After at least a half an hour, I dredged the chicken in flour, then a whipped egg and finally in bread crumbs. It was fried in hot oil for about 5 to 7 minutes until the crust is golden brown. Then I baked the lot in a 325º oven until the center had reached 165º.
I served steamed asparagus and mashed potatoes as sides. Chocolate chip cookies for dessert.
