Needed a quick main course today. The other day I found a 1/3 bottle of white wine hiding in the fridge.
I picked up a couple of white fish fillets on teh way home. Sliced up a couple of small shallots, one clove garlic. In to the pan with a TBS of neutral oil. When wilted added teh zest of half a lemon, cracked black pepper and a little dill. Poured in the wine. When it was simmering I added the fish which I had seasoned. Dropped a lid on it. When we had finished our salad the fish was done.
Rice accompanied it.

(1,537 posts)I have a lemon tree nearby so I grab one off the tree whenever I make fish. I'd like to make your recipe with some fennel.

(3,582 posts)I had the liquid at a soft boil then turned it down to a simmer while we had our salad.

(21,139 posts)I remembered your recipe and it was delicious. I didnt have parsley so I used capers, removed the fish and browned it more in the air fryer. Then added wondra flour to the broth and served it over the fish with rice I cooked in chicken broth with added lemon pepper seasoning.
