What's for Dinner, Fri., Nov, 4, 2022

Sheet pan bake with squash and breakfast sized pork sausages. They were tossed in a mixture of maple syrup and olive oil and roasted.

I made a dipping sauce of maple syrup, mayo, and and gochugang.

Toasted cheese bread using Asiago.

Cherry berry kombucha.

I mean, I can get extra cheese anywhere. It's flavor that's most important to me, and I'm very picky when it comes to pizza.

There's only enough for one, but I'm not hungry. If I do get hungry later, I'm sure I can dig up something. Until then, just drinking my water.

Used lemon pesto seasoning and dill compound butter inside. They are just about ready!

Salad on the side.

Early and Light meal as I have a shift tonight.

11. Chorizo tacos

on flour tortillas (DH's preferred). I'll top them with tomatillo green sauce, onion, cheddar and pepperjack. I wish I had some cilantro, but the sauce has plenty; it just won't be the nice green crunch on top.

Later, I'm making the custard mix to chill overnight to make rum raisin ice cream tomorrow. And I'm making 'pumpkin' muffins for breakfast, so I'll start the mix for that too. The orange mash is already thawed.

It's just orange mash because I get a selection of whatever fall gourds look good - pie pumpkin sometimes, but not always. Since I've been fooled by squash before (it looks good and feels heavy, only to cut it open at home to find it dry, fibrous and tasteless), I usually include one red-orange sweet potato. One half-sheet pan of roasted squash, potato and/or pumpkin mashes up in the food mill to over 4# for the freezer. Good for desserts (great pie), gnocchi or veg sides. This particular batch had no duds, so the color and taste are really good.
